Grilled garlic and pepper pork rib (ซี่โครงหมูย่างกระเทียมพริกไทย)


 
  Pork ribs are always admired for everybody in Thailand, also for me and my family in German. In Germany, Pork ribs are cheaper than in Thailand. What is the reason? May be with bone, or difficult to eat. The exactly reason are difficult to explain. But for me, Pork rib is more delicious with softer and juicier in my mouth and of course, more fat! (the reason for deliciousness!)


Thai way or easy Thai style (for me!) to eat pork rib in Thailand is grilled it with some Thai herb, called “Sam Greou” (garlic, pepper and root of coriander) with some saltiness from salt. We marinated it first at least 30-60 minutes but overnight in refrigerator is recommend. I then grilled it with charcoal. That why, Thai kitchen are always deposited in the area of open air place, in house. You can image the smell of grilled meat with aroma of smoke, yummy!



For today receipt, I add some more ingredients in the recipes that difference from the original one. Just for my favorite personal taste. I can show you for the guideline. Hope you will likes it. 
 
Ingredients

1 kg.  pork ribs (short or long depend on you have)
3 cloves of Chinese garlic (peeled)
1 tsp. salt
1 tbsp. pepper (not ground!)
2 tbsp. soja sauce
1 tbsp. plant oil
1 1/2 -2 tbsp. spirit (whatever you have.)

Method

Preparing the marinate sauce, crash Sam Greou (garlic, pepper and coriander roots) in mortar with salt until become paste and put it in mixing bowl or small bowl and add soja sauce, oil and spirit. (if you would like your grilled pork rips to be a little bit spicy likes me, you can add some chili sauce or chili power). Then mixes everything all well mixed. Set aside.

Wash the pork ribs with running water, then dry it with kitchen paper.
 
Place clean pork ribs in big mixing bowl then pour all marinate sauce in, mixed well. Place in refrigerator and let it marinated in cool temperature overnight.


When the times of baking come, turn on the grilled machine you have. I have oven with grilled system. Set it for 220 degree celsius. Then place piece by piece of pork rips to rack. Grill it 20 minutes for the first side the 15 minutes for the another side. You can grilled it for shorter or longer if you likes more hard and crispy.
  
 
 
 
 Served with your favorite salad.
 
 

  Today we eat with potato salad and mixed salad. Wonderful!!.
