Pad Kra Prao Pla - Stir fired smoked fish with mushroom and holy basil leaves (กระเพราปลารมควันกับเห็ด)

 


"Pad kra prao" is one of several Thai disc that very famous in Thailand and around the world nowadays. In Thailand, we have several variety kinds of this disc. We can put many meat and some vegetable. The most popular is chicken, I thick. For this disc with chicken, we called "Pad kra prow kai".



However, for some people who area very take care their heath. They can cook with fish. Likes me, fishes is my favorite food. I always cook fish with several disc, also this stir fired disc. This times, I use smoke fish that left over from breakfast. It's a good opportunity to destroy it and make me not feel guity when I sometimes throw away some old food.


Ingredients

1 smoked fish (cut in small pieces)
5-7 champignon (slice) or another kind of mushroom
1 cups of holy basil leaves
4 cloves of garlics
5-10 fresh chili (depend on how spicy you prefer)
2 tbsp. soja sauce or fish sauce
2 tbsp. oyster sauce
1 tbsp. sugar
3 tbsp. vegetable oil.




Method

1. crush both garlic and chili in mortar (not too much, just as the picture).
2. Pour vegetable oil in hot pan, wait until hot. Add the chili-garlic paste in hot pan, stir it for 20 second until smelled.
3. Add champignon, cooked and stir it until soft.
4. Add fish, soja sauce sugar and oyster sauce and stir for 30 second.


5. Add holy basil leaves at final and fast stir for 10 second. Take out the pan from hot stove.


Serves with rice.
